Procrastinator's Valentine's Baking: Cinnamon Chocolate Chunk Cookies

Did you screw up? Did you not order appropriate chocolate for Valentine’s Day?

Shame on you.

You still have options besides the stuff sitting at the end of the grocery checkout lines. Yes, you do.

You could bake. With chocolate, of course.

If you’re particularly good in the kitchen, you could try an entrements with hearts on the outside. Or heart-shaped brunsli. But if you can’t even order chocolate for Valentine’s Day more than a day in advance, my guess is that you’ll need something a little easier.

It’s ok. I’m here to help. I always am. This time, with a recipe for some kicked-up cinnamon triple chocolate chunk cookies, with three kinds of chocolate, that just might save your procrastinating behind tomorrow.

Cinnamon Triple Chocolate Chunk Cookie Ingredients (as inspired by Betty Crocker)

1 cup butter, softened

¾ cup brown sugar

¾ cup white sugar

1 egg

1/4 teaspoon salt

2 teaspoons cinnamon

2 ¼ cups all-purpose flour

5 ounces chopped bittersweet chocolate (Scharffen Berger 70% cocoa bittersweet)

5 ounces chopped semi-sweet chocolate (El Rey Mijao 61% cocoa semi-sweet)

5 ounces chopped milk chocolate (El Rey Caoba 41% cocoa milk chocolate)

While this recipe is based off a simple chocolate chip cookie recipe, the added cinnamon, along with three types of high-quality chocolate, will leave anybody you hand these to for Valentine’s Day tomorrow thrilled.

Unless they don’t like cinnamon or chocolate. In which case, well, sorry, this post won’t help you. But otherwise, read on.

Cream the butter and sugars until slightly fluffy, then beat in the egg. Add the salt and cinnamon, then add the flour and mix until nearly incorporated. Add the chocolate and mix until dough is just uniform.

Roll dough into 1-inch diameter balls, and bake on a sheet at 375° F for 10-12 minutes. Allow cookies to rest on the baking sheet for 1-2 minutes before moving to a cooling rack.

It’s worth noting that if giving these as a gift, you should probably make it pretty. Use, like, ribbon or something. Hopefully the gift goes over well. If not, you can eat these yourself. They’re tasty.
