1 cup sugar
3 egg yolks, slightly beaten
1 teaspoon vanilla
1 cup evaporated milk
1/2 cup butter
1-1/3 cups coconut
1 cup chopped pecans
Makes enough for a two-layer 8-inch cake.
- Combine sugar, milk, egg yolks, butter and vanilla. Cook and stir over medium heat until thickened, about 12 minutes.
- Remove from heat; add coconut and pecans.
- Cool and stir occasionally until spreading consistency.
