Well, Virtuous Vegan Chocolate Cake In Paris Mousse
I entered this cake my competitors first cooking contest thekitchn.com's bittersweet baking and was delighted when selected by the editors as a finalist! Dori Greenspan, James Beard award-winning author of books on the legends as Julia Child, Daniel Boulud, Pierre Herme, etc., were among the judges. Since it was not impressive in itself, I was ecstatic when I read his comment:
"I never set out to make anything specifically vegan, but this recipe is so well done that I wanted to try, that convincingly demonstrates a delicious cake of multiple textures, a bond may be vegan, but not the only virtue of the cake. My guess is that the components of the appearance of chocolate cake in three parts and polished capture the imagination of more ambitious bakers. "
Speaking of writers, revolutionaries pasty chef Fran Costigan, whose vegan cooking class I took last year at the ICE and the cake recipe I used as the basis for this cake, also had this to say "... thank you for taking what you have learned and create a masterpiece that reflects your creativity and skill. "
It is indeed a great leap in the style of my previous cakes, but I tried to take steps towards a healthier life, including exploring alternative cake recipes. I am not a vegetarian by any means, but I think vegan cooking techniques using their lack of cholesterol containing ingredients such as butter, eggs and milk. I also wanted to make aesthetically pleasing that I know many people may be wary of vegan baking. I shared the cake with co-workers / neighbors, and they could not believe it was a vegan cake, even after having tasted!
The recipe is an experimental collage drawn from various culinary pictures and recipes. The assembly process is vaguely that the French-style cakes, inspired by the appearance and components will epicurious.com, the cake recipe is adapted from the class I took with Fran Costigan. Includes chocolate cake in three layers and layers: cake filling, mousse and ganache. It has a touch of flavor coffee, espresso powder with the ingredient, and is laced with hazelnuts and orange zest. This is a rather involved cake, but can by all means can be simplified. Both the mousse or the cake frosted with ganache can be eaten alone.
Chocolate Mousse
2 cans 12 oz firm tofu (like Mori Nu)
10 ounces of bittersweet chocolate, chopped
2 tablespoons agave (or maple syrup)
1 teaspoon vanilla extract
Chocolate cake
1 / 2 cup whole wheat pastry
1 / 2 cup flour
1 / 3 cup unsweetened cocoa powder
1 / 4 cup sugar
1 teaspoon baking powder
1 / 2 teaspoon salt
1 / 4 cup canola oil
1 / 2 cup maple syrup, Grade A amber, brown
1 cup soy milk
1 teaspoon coffee powder dissolved in 2 tablespoons water
1 1 / 2 teaspoons pure vanilla extract
1 teaspoon apple cider vinegar
4 ounces bittersweet chocolate, chopped
1 teaspoon orange zest
1.2 toasted hazelnuts, skins removed, chopped
Ganache Glaze
8 ounces bittersweet chocolate, chopped
1 cup soy cream
2 c. teaspoon Grand Marnier
Furniture
Chocolate chips
Candied orange peel
Hazelnuts, roasted, skin off
Chocolate transfer sheet
Prepare the mousse:
Melt chocolate 10 ounces chocolate in a bain-marie. Drain water from tofu. Place tofu, agave / maple syrup and melted chocolate in a food processor and mix until well blended and smooth. Refrigerate at least 1 hour to firm. (It turned out to be very rich and dense. I think I would like to add some soy milk next time).
Prepare candied orange zest, if making your own:
I do not end up doing mine, and it was worth it to end. The cleric added a nice crunch and the element of citrus, not to mention a sharp color contrasts in dark chocolate. I adapted a recipe

Assemble the cake:
I used a bottom of 8 x 2-inch ring mold cake like. I'm sure there are alternative ways that the configuration (for example, using the spring form PAN), but this method is what I came at that time. I have to cut a cake to fit the tire using the tire as a guide.
So I filled with foam. Make sure you press the foam at the edges (I did not). I left a little space on top for the ganache. Pour the ganache cake and move to float on the sides to cover the surface of the upper part. Let the ganache in the refrigerator. A chocolate transfer sheet is a plastic film embossed with a pattern-based cocoa butter (which I think is a byproduct of the cocoa bean and therefore still vegan [Fran Costigan did confirm that the transfer sheet vegan was - thank you]). I melted chocolate and spread it over the leaves in a thin layer with offset spatula. Before the chocolate fully set, I cut triangular shapes in chocolate. Once set, I peeled the chocolate from the sheet and was left with triangular shards of chocolate etched with the design of cocoa.
I'll be experimenting with this cake a bit (I have been asked to do this again for an upcoming event). It was indeed a great job, but I had fun and learned a little at each step of the road. White Chocolate Mousse
Ingredients
8 ounces imported white chocolate, chopped
1 3 / 4 cup whipping cream
4 tablespoons light corn syrup
3 ounces semisweet chocolate (or bittersweet), chopped
Stir white chocolate, 1 / 4 cup cream and 2 tablespoons of syrup to a saucepan over very low heat until the chocolates is melted and smooth.
Pour into a bowl and let cool.
Whip cream 3 / 4 cup with an electric mixer until stiff.
Stir white chocolate cream in lots of 2.
Divide the mousse into 4 ramekins.
Cover and refrigerate until firm, about 4 hours.
Can be prepared up to 2 days before.
Bring remaining 6 tablespoons of cream and 2 tablespoons corn syrup to boil in heavy saucepan over high heat.
Reduce heat to low, add or semisweet dark chocolate and stir until melted and smooth.
Cool to room temperature. Pour the sauce over each foam sufficient to cover completely.
Garnish with mint leaves, leaves chocolate or chocolate curls, if desired. Serve with berries or raspberries or strawberries.
Serve with a dollop of chocolate mousse.

Dark Chocolate Mousse Cake
Rind:3 / 4 cup almonds
1 / 4 cup pitted dates wrapped
Cocoa powder
1-2 teaspoons of water
Grind the almonds in a food processor.
Add dates and continue to develop the plot dough.
Add cocoa powder to taste. Add a little water if necessary to ensure that the dough holds together when pressed.
Press the lower part of the "spring form pan 8. Set aside for filling.
Filling:
3 / 4 cup Irish moss gel *
1 cup water
3 / 4 cup cashews
Maple syrup 1 / 2 cup
1 / 2 cup cocoa powder
6 drops of stevia
A vanilla extract
1 / 8 teaspoon Himalayan salt
4 1 / 2 c. tablespoons butter, melted cocoa
2 tablespoons melted coconut oil
Combine all ingredients but the butter and oil until smooth and creamy.
Add last two ingredients and mix until incorporated.
Pour the mixture over the dough and chill in refrigerator until firm, at least 6-8 hours.
* If the gel was cooled, pack it into the cup.

Chocolate Mousse
Mousse Chocolate
Ingredients
* 4 1 / 2 ounces bittersweet chocolate, finely chopped
* 2 tablespoons (1 ounce) unsalted butter, cubed
2 tablespoons espresso or strong coffee (decaffeinated espresso that is used from a local Starbucks)
* 1 cup cold heavy cream
* 3 large eggs, separated
* 1 tablespoon sugar
(Optional) Dog and extra whipped cream
Instructions
1 Whip cream to soft peaks, then refrigerate.
2 Combine the chocolate, butter, espresso and on top of double boiler for hot water but not boiling, stirring frequently until smooth. Remove from heat and let cool until the chocolate is just slightly warmer than body temperature. To test, dab of chocolate on the lower lip. You should feel warm. If it is too cold, the mixture adheres to the other ingredients are added.
3 When the chocolate has cooled slightly, whisk the egg whites in medium bowl until foamy and begin to take shape. Sprinkle with sugar and beat until soft peaks form.
4 When the chocolate has reached the proper temperature, add the yolks. Gently stir in about one third of the whipped cream. Fold half the egg whites until incorporated, then fold in remaining whites, and finally the remaining whipped cream.
5 Spoon or pipe the whipped cream into a bowl or individual dishes. If desired, the layer of raspberries and whipped cream. Refrigerate at least 8 hours. (The mousse can be refrigerated for up to one day.)
Serves 5-8, depending on the size of the portions.

Almond Chocolate Mousse
Almond Mousse au Chocolate
1 envelope unsweetened gelatin powder
1/4 cup cold water
2 unsweetened baking chocolate squares
1 semisweet chocolate square
1/2 cup milk
1/2 cup sugar
1 pint heavy cream
1/4 teaspoon almond extract
1/2 cup blanched almonds, toasted & chopped
1 envelope unsweetened gelatin powder
1/4 cup cold water
2 unsweetened baking chocolate squares
1 semisweet chocolate square
1/2 cup milk
1/2 cup sugar
1 pint heavy cream
1/4 teaspoon almond extract
1/2 cup blanched almonds, toasted & chopped
- Soften gelatin in cold water.
- Melt chocolate in milk over boiling water. Add sugar and stir until it dissolves completely. Let cool.
- Whip cream until it stands in soft peaks.
- Stir almond extract and chopped almonds into cooled chocolate. Fold 1/3 of the whipped cream into chocolate mixture. Then fold in remaining cream.
- Pour into serving bowl and let set in refrigerator, covered with plastic wrap, for at least 2 hours or overnight.
- Decorate with whipped cream, candied violets, grated sweet chocolate, or toasted almonds before serving. Serves 6.

Madecasse Chocolate Launch: Great Company, Great Chocolate & a Chocolate Mousse Recipe
The amazing owners and creators of Madecasse Chocolate were at Hub SOMA in San Francisco last night to 'launch' their chocolates. I've been eating their great chocolate for some time now, but it's always good to gather chocoholics and chocophiles together for an evening of great chocolate.
The history of their chocolate is worth telling. Tim McCollum &Brett Beach were inspired by their Peace Corps experiences in Madagascar. Besides producing fabulous chocolate, Madecasse helps rural cocoa farmers access the equipment and training they need to get more value from their crops. If you know anything about chocolate growing and harvesting in African countries, you know there are often child labor problems, as well as poorly paid worker and growers. Madecasse Chocolate is actually made in Madagascar, making it one of the only chocolates made in all of Africa. This creates four times more income for the people there than Fair Trade.
The Madecasse Principles

2 Partner with the people of Madagascar to share skills, ownership and profits.
3 Farming and creating finished products, together, make a sustainable economy.
Madécasse is “tree to bean to bar” in Madagascar. Everything is done at the source, from harvesting and curing the cocoa in the Sambirano valley, to crafting their finished chocolate bars in the highlands of Madagascar.
Last night we tasted lots of chocolate starting with the 63% Dark which was very smooth... well all their chocolate was pretty smooth. I tried the Sea Salt and Nibs which was excellent, too. Actually I tried everything. I think it was a tie for me betweet the 75% and 80% dark chocolate. I like my chocolate, like my tea, strong.
I often give recipes on his blog that call for real vanilla. Madecasse produces and sells pure Vanilla Powder, Vanilla Extract, Vanilla Cane Sugar (yum!), and Bourbon Vanilla Beans. Definitely worth ordering directly from Madecasse.
Sarah, Brett Beach's wife, made Chocolate Mousse for all those in attendance last night. Of course, I needed the recipe, and she was very forthcoming. It's so simple!
Chocolate Mousse
Melt 1 bar of Madecasse Dark Chocolate over a pan of simmering water --or in a double boiler. While the chocolate is melting, whip the whites of two eggs until you have peaks. Fold the chocolate into the whites, blending. That's your mousse! Easy and delicious. To really have a taste sensation, mix 1/2 of one bar with 1/2 of another! The history of their chocolate is worth telling. Tim McCollum &Brett Beach were inspired by their Peace Corps experiences in Madagascar. Besides producing fabulous chocolate, Madecasse helps rural cocoa farmers access the equipment and training they need to get more value from their crops. If you know anything about chocolate growing and harvesting in African countries, you know there are often child labor problems, as well as poorly paid worker and growers. Madecasse Chocolate is actually made in Madagascar, making it one of the only chocolates made in all of Africa. This creates four times more income for the people there than Fair Trade.

Madécasse is “tree to bean to bar” in Madagascar. Everything is done at the source, from harvesting and curing the cocoa in the Sambirano valley, to crafting their finished chocolate bars in the highlands of Madagascar.
Last night we tasted lots of chocolate starting with the 63% Dark which was very smooth... well all their chocolate was pretty smooth. I tried the Sea Salt and Nibs which was excellent, too. Actually I tried everything. I think it was a tie for me betweet the 75% and 80% dark chocolate. I like my chocolate, like my tea, strong.
I often give recipes on his blog that call for real vanilla. Madecasse produces and sells pure Vanilla Powder, Vanilla Extract, Vanilla Cane Sugar (yum!), and Bourbon Vanilla Beans. Definitely worth ordering directly from Madecasse.
Sarah, Brett Beach's wife, made Chocolate Mousse for all those in attendance last night. Of course, I needed the recipe, and she was very forthcoming. It's so simple!
Chocolate Mousse
Melt 1 bar of Madecasse Dark Chocolate over a pan of simmering water --or in a double boiler. While the chocolate is melting, whip the whites of two eggs until you have peaks. Fold the chocolate into the whites, blending. That's your mousse! Easy and delicious. To really have a taste sensation, mix 1/2 of one bar with 1/2 of another! Chocolate Mousse Recipes
60 Second Chocolate Mousse
1 cup chocolate chips
1 egg
1 teaspoon vanilla
1 cup heavy cream
Whipped cream
Place chocolate, egg, and vanilla in blender and chop.
Heat cream until small bubbles appear at edge. Do not boil. With blender running, pour in hot cream. Blend until chocolate is melted and mixture is smooth. Pour into dessert dishes and cover with plastic and chill. Serve with whipped cream dollops.
Best Chocolate Mousse Recipe
12 oz. semisweet chocolate chips
4 eggs, separated
1/4 cup confectioner’s sugar
12 oz. whipped topping
Ground nuts for topping
Melt chocolate chips over low heat. Let cool slightly.
Beat egg whites with sugar until stiff peaks form.
Into the chocolate, beat the egg yolks one at a time to make a nice creamy mixture. Fold in the whipped topping, then the egg whites, GENTLY. Place into a serving dish and sprinkle with nuts. Refrigerate at least 2 hours before serving.
Rich Chocolate Mousse
8 oz. semisweet chocolate
3 tbsp. powdered sugar
3 tbsp. hot strong coffee
3 egg yolks
8 oz. frozen whipped topping, thawed, divided
In a double boiler over simmering water, melt chocolate. Remove top pan from heat; stir in sugar and coffee. Add one yolk at a time, stirring until smooth.
Place top pan over boiling water; cook and stir for 3-4 minutes or until thick. Pour into bowl; chill 6-8 minutes. Fold in 3 cups whipped topping. Spoon into dishes. Top with whipped topping.
Another Chocolate Mousse Recipe
1/2 cup brown rice syrup
2 teaspoons vanilla
1 lb firm tofu, cut into chunks
1/4 cup unsweetened cocoa powder
1/2 teaspoon grated orange zest
water as needed
Place rice syrup and vanilla in a food processor. Process, adding the tofu a few chunks at a time. Then add cocoa and orange zest. Add water to thin as needed. Pour into serving dishes and chill.
