1 cup oil
4 eggs
3-1/2 to 4 cups flour
1 teaspoon baking powder
1 teaspoon vanilla
1 teaspoon almond extract
8 oz. walnuts
12 oz. chocolate chips
- In a large bowl, mix together the sugar, oil, and eggs. 
 - Add the sifted flour, baking powder, vanilla, and almond extract, and mix well. Add the walnuts and the chocolate chips. 
 - Mixture should be very thick and sticky. Shape into two loaves and place on either side of a cookie sheet. 
 - Bake at 325 degrees F for 30-35 minutes and then remove from oven. 
 - Cut into slices while still warm and return to the oven for another 5-10 minutes, or until slices are light brown.
 
1/3 cup butter, softened
3/4 cup sugar
1 egg
1 cup mashed banana
2 cups all-purpose flour
2-1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped pecans (or walnuts)
1/2 cup chocolate chips (or more if desired)
1/2 cup buttermilk
- Preheat oven to 350 degrees F. 
 - Cream butter and sugar. Mix in egg and banana. 
 - Stir together flour, baking powder, baking soda, salt, nuts, and chocolate chips. Add this mixture to creamed mixture alternately with buttermilk. Stir until just blended. 
 - Pour batter into a greased and floured loaf pan (9 x 5 x 3 inches). Bake for 65 minutes, or until bread tests done. 
 - Cool in pan for about 5 minutes, then turn out on a wire rack.
